From a small town on the outskirts of Puerto Vallarta, Maria Coward, came to the United States in hope of bettering her life and the lives of her children. After working in different restaurants to support her children, she decided it was time to begin her own business. With her fierce determination and compassionate spirit, Maria opened the doors to La Costa Mariscos, Fine Foods of Mexico.
With a small staff of four, La Costa first opened its doors on October 7, 1992 in a little spot in Downtown Bakersfield just off of 21 st street. With continued perseverance, many days were spent waiting for customers to come in to experience the tastes of Puerto Vallarta that Maria had to share. As business grew, she was joined by her son, Alex who began as a dishwasher and then later, daughter Larissa who helped seat guests and pay out checks. After 21 years in the same location and utilizing every inch of space, La Costa had outgrown its humble beginnings and moved to a building 3x the size of the former, known as The Ice House.
In the summer of 2014 La Costa closed the page on one chapter and began another. Now joined by all of her children, Alex, Larissa, Adriana, and Chelsie, Maria’s once small restaurant, La Costa has now grown to over 70 employees. Yet the 2 original cooks, who began this adventure with her; Javier Ramirez and her brother Jorge Lopez, remain. La Costa continues to strive to offer fresh dishes and drinks while transporting you to their native town of Puerto Vallarta without having to leave Bakersfield.
